
Trentham's Historic Heart
Sitting proud on the corner of High Street and Cosmo Road, The Cosmopolitan has long held a place in the heart of the Trentham community. Built circa 1866, its sweeping weatherboard verandahs have witnessed countless local stories. It's the pub on the corner where your grandfather might have had his first lemonade, and his first beer, just as his father had done before him.
But in 2005 The Cosmopolitan story took an unexpected turn when fire ravaged the iconic pub. The sense of loss was palpable. Click here for a pictorial view of the history of The Cosmo.
To New Beginnings
Today there are reminders of the fire – the old piano and a four poster bed remain just as they were that fateful night. But 2009 marked a new beginning for The Cosmo.
The new owners are local to the area. Driven by a shared vision of the pub's glory days – of exceptional food, wine and the company of great friends – their plans to restore The Cosmo have become the talk of the town.
“It’s a pretty ambitious project and it will take a while for the entire pub to be back up and running… we’re hoping the locals will be there with us for the restoration journey,” says co-owner Rod Hughes
With stage 1 complete, The Cosmopolitan Gardens are now open every Friday, Saturday and Sunday. From April the Stables will be open through the cooler months. Exuding charm and laid-back, rustic ambience, they're the perfect place for a relaxing drink or dinner with friends, or to celebrate a special event.
Philosophy
The Cosmopolitan is located in Victoria's Macedon Ranges – one of the state's most renowned growing districts. Exceptional produce – fresh foods, artisan products, wine, beer - is in abundance. It seems only logical that Cosmopolitan philosophy is dedicated to sourcing the very best of it.
With this focus, the region’s best is a constant source of inspiration. The menu reflects ‘new Australian’ flavours, while allowing the integrity of the fresh produce to come through.
And so it is here in this iconic corner pub, surrounded by some of the country’s finest produce, we find ourselves immersed in flavour and aroma, and in the company of great friends.

The Cosmopolitan Hotel is proud to be a member of Daylesford Macedon Produce (DMP). Bringing together the best growers, provedores, chefs, restaurateurs and vignerons of the Daylesford Macedon Ranges region, the DMP philosophy reflects Cosmo's own.
Food produced by the DMP group includes organic pork, vegetables, fruit and herbs, cheese, smallgoods, biodynamic breads, chutneys and preserves. Gourmands of the sweet-toothed persuasion can choose from superb chocolates, biscuits, cakes, icecream, honey and jams.
The vignerons of the region are making a name, with boutique wineries producing flagship Pinot Noir, Chardonnay and Méthode Champenoise, superlative Shiraz and Riesling as well as noteworthy Cabernet, Merlot and Pinot Gris. For connoisseurs of beer, Holgate Brewhouse offers award-winning premium ales at its boutique microbrewery in Woodend. Being the spa region, we also have water producers.
To this impressive list, add an array of passionate producers, award-winning winemakers and chefs, dedicated provedores and educators, and you have a thrilling recipe for a dynamic and evolving regional cuisine.
